Halloween recipe .. Chilli & Fennel Roasted Pumpkin Seeds.

I had to share this really quick recipe with you, I got sent it, and after trying it myself, the end result tastes awesome.
So this recipe is perfect as a little snack, or in a bowl on a Halloween buffet, and they are so simple to make.

  • Take the seeds out of the pumpkin, and remove any flesh that is attached.
  • Rinse the seeds under running water, until all clean.
  • Place in a bowl, and add a glug of extra virgin olive oil.
  • Add some sea salt.
  • And then some chilli flakes.
  • And mix together.
  • Spread out onto a baking tray and sprinkle over some fennel seeds.
  • Bake at 180 degrees, for 15 minutes.
  • Leave to cool, then store them in an air tight container.

They sound so simple, but they taste awesome.

Date Night ...

I honestly believe date nights are what keep relationships healthy, it's so important to spend quality time together as a couple! Whether it be go out for a meal, cinema, bowling or just some activity that you can do together, just the two of you! 

In my relationship we try our best to have atleast two date nights a month, more if we can fit it in. But obviously we both have friends we like to socialise with too. Most the time we just go out for food, probably because we both love food! It's not until you sit down and start chatting, that you realise how much you actually have to catch up on. I could go from Saturday to Saturday without having a clue what he's done during the week because we've both been so caught up in work and training. I'm sure this might be slightly different if we lived together, but at the moment we are quite happy with our living arrangements.
I also think going out on date nights keeps your relationship upbeat, you should never let your relationship get boring! The only reason it tends to get boring is if you get stuck in a rut of the same routine. Which I can imagine is pretty easy to do if you lived together! It should also never be an effort to spend the evening doing an activity or going out. I always feel so refreshed after a good date night, because it reminds me of all the good parts of our relationship, and how well suited we are for each other. 
Honestly it doesn't even have to cost you much, but even if it does, your relationship should be worth it. A cinema trip, a nice day out. Don't be afraid to try something different, you've got your best friend by your side why don't you do something that you've both wanted to do for a long time, indoor skiing, treetop climbing etc. Or make a date day out of a shopping trip, especially with Xmas shopping round the corner, you could turn your annual boring Xmas shopping into shopping with cocktails and food, our idea of heaven! Don't for one minute think that men don't like cocktails!!

Autumn Soup: Spiced Pumpkin, Sweet Potato & Carrot


Such a simple recipe for a warm meal in the autumn months. It may not look very appealing but tastes lovely with a nice kick to warm you up.
Ingredients needed:
1/2 Pumpkin cubed
2 Sweet Potatoes cubed
2 Large Carrots cubed
1 Large White Onion
1 Litre of vegetable stock
1/2 red chilli
2 tsp. turmeric
2 tsp. cumin
2 tsp. mild chilli powder
1 tbsp. vegetable bouillon
Firstly place the pumpkin, sweet potato and carrot on a baking tray, drizzle with olive oil and season, roast in the oven at 180 degrees for 35 minutes or until soft.
While the veg roasts in the oven, brown off the onions in a large saucepan, once golden add the chilli, turmeric, cumin and chilli powder, stir and let the onions soak in the spices. This should smell amazing. After 2-3 minutes add the vegetable stock.
Once the veg is roasted add it to the vegetable stock, with vegetable bouillon and let simmer for 30 minutes.
Blitz the soup with a hand blender and serve with some crusty bread.
Perfect on a cold afternoon!

Jamaican Me Crazy ...

So back in 2010 I packed my suitcase and took off to Jamaica for 5 weeks, volunteering with a company called Projects Abroad. I was working with the construction section of their company, building sanitation units for families living in poverty. I worked Monday to Friday and travelled at weekends, in the 5 weeks I was there I managed to travel to most parts of Jamaica. It has to be the most amazing experience of my life so far, not a lot of 17 years olds could say they travelled to the other side of the world solo.
Back then I would never have thought I would ever own a blog to share these photos on, so apologies for the poor quality.
So above you can see, photos of our work, we worked in villages surrounding Mandeville (where I stayed) digging 6 foot holes, and building sanitation unit on top. We aimed to build two a day, it involved a lot of work.
And then there is the photos of travelling Jamaica, so there is swimming with dolphins in Ocho Rios, jumping off water falls at YS falls, travelling down the black river, chilling under the sunset at montego bay, dining at the Cool Runnings restaurant, touring the Appleton Rum factory, and caving. These are just some of the activities I took part in, its safe to say it was a fun-filled adventure.
If any of you get the chance to do something like this, do it, these are memories that will live with me forever.
